He picked up golf at the age of seven at the famed Wentworth Golf Club in London and credits his father for introducing him to the sport because he was a member of the Club. He says his most memorable golf experiences are finishing second in the 2008 Volvo China Open and playing in the 1993 Open as an Amateur. He won the Sunningdale foursomes in both 2003 and 2004 alongside Ross Fisher.

In February 2014, he won the Asian Tour Q-School Stage I by a staggering 14 shots, shooting an impressive 16-under par 272. He placed 21st at the SAIL-SBI Open earlier this year and finished 15th at the Solaire Open, where he had scores of 72-69-71-74. He is currently in 70th position on the Asian Order of Merit but has only played in three tournaments. He has two wins on the UK Mini-Tour this year as well.

Simon finished 66th on the Asian Order of Merit in 2010 but fought his way to a T-25th outing at the Qualifying School in Thailand in January of 2011 to regain his playing rights. He started the year with four straight cuts, and his best result of the year came in tied eighth place at the Yeangder Tournament Players Championship in Chinese Taipei. In 2012, Simon's best result was a tied-11th finish at the King's Cup. The Englishman produced his best performance on Tour when he finished T-2nd at the Volvo China Open in 2008 with a 1-under par 287. The result was enough to help him seal his Tour card for 2009 as he ended the year in 21st place on the rankings. Simon started 2009 strongly with a T-11th place at the Asian Tour International in Thailand. One other top-10 at the Indonesia Open and four top-30s helped secure his 2010 Tour card with a 46th place finish on the Order of Merit. Simon made his debut on the Asian Tour in 2006 and enjoyed a flying start with a T-5th at the Aamby Valley Asian Masters in India. He went on to register a T-10th finish in the Brunei Open. In 2007, he safely kept his card by finishing 44th on the money list, thanks to a runner-up finish at the Hana Bank Vietnam Masters. Has played on the European Challenge Tour, where his best finish was seventh at the Formby Hall Challenge in 2003. In 2006, went and played in Asia on the Asian Tour. Partnered Ross Fisher, a multiple winner on the European Tour, and won back-to-back titles at the Sunningdale Foursomes in England in 2003 and 2004.

When he's not golfing, Simon is really into cars and enjoys watching sports.

Played in 49 European Tour events, making 15 cuts. His best finish was T-2nd at the 2008 Volvo China Open.

2023 Notes: He made his Legends Tour debut with limited appearances after he finished in a T-6th at Q-school, missing out by one place and two shots! His best finish was T-18th in his first event, the Riegler & Partner Legends.

2024 Notes: Griffiths T-2nd in Q-School to join the European Legends Tour, played in 14 European Legends tour events with eight top ten finishes. Was 4th on the order of merit with earnings of euro287,755. He capped a brilliant first year on the Legends Tour by winning Barry Lane Rookie of the Year. On top of his victory at the Farmfoods European Senior Masters, Simon was runner-up at the season-ending MCB Tour Championship in Mauritius, losing a playoff to Peter Baker on the third extra hole.

2025 Notes: Played in 19 Legends Tour events with eight top ten finishes. Was 7th on the order of merit with earnings of euro251,296. Simon got his season off to the perfect start, winning the Staysure Marbella Legends by two shots to win his 2nd tournament in four starts. Shot a final round 65 to finish T-5th at the OFX Irish Legends. Played in four PGA Tour Champions events, best finish T-17th at the Senior Open Championship.

2026 Notes: Was T-56th at the Staysure Marbella Legends.
